One thing we love about Mexico is the food.  Certainly we enjoy street tacos but there is much more to Mexico than the typical tacos, enchiladas and table salsa we see in most Mexican restaurants in the US.  Mexico has a deep history of foods, a blend of the influences of Mayan, Aztec and European cultures to say the least.  As we learn more about these wonderful foods we will post some of our favorite recipes here. Rice and Pastas

Cesar Salad When you can get fresh Romaine lettuce this is great.
   

Soups & Stocks

Chicken Stock   An essential element to many recipes.  A rich stock will enhance what ever dish it is used in.  Please do not use canned stock, too much salt and no character. 
Sopa de Fida Seca A unique dry soup with fried noodles. 
   

Pan (Breads)

Cubiletes Cheese Muffins.  Not if you are on a diet `
   

Pickles

Escabeche Pickled Jalapeño Chile Peppers. Only hot if you want them to be.  Bet you can't eat just one!
   

Tamales

Tamales in Corn Husks   These are so light they need no sauce.
