One thing we love about Mexico is the food.  Certainly we enjoy street tacos but there is much more to Mexico than the typical tacos, enchiladas and table salsa we see in most Mexican restaurants in the US.  Mexico has a deep history of foods, a blend of the influences of Mayan, Aztec and European cultures to say the least.  As we learn more about these wonderful foods we will post some of our favorite recipes here. Mole Casero A wonderfully complex salsa with many uses.  This one has 20 ingredients even chocolate. 
Mole Negro The best, in our opinion, of the seven Oaxacan moles

Salsas

Adobo with Ancho & Chipotle Chiles Adobos are salsas used on meats.  The meat can be cooked in the Adobo or it can be used as a marinade.

Salsa De Chile Ancho

Pipián Rojo de Almendras, Red Pipián salsa with Almonds.  Pipiáns are a wonderful salsa that always contain ground pipitas (pumpkin seeds).

Salads

Cesar Salad When you can get fresh Romaine lettuce this is great.
   

Soups & Stocks

Chicken Stock   An essential element to many recipes.  A rich stock will enhance what ever dish it is used in.  Please do not use canned stock, too much salt and no character. 
Sopa de Fida Seca A unique dry soup with fried noodles.

Cubiletes Cheese Muffins.  Not if you are on a diet `

Escabeche

Pickled Jalapeño Chile Peppers. Only hot if you want them to be.  Bet you can't eat just one!

   

Tamales
