 HISTORY In Mexico before the Spanish Conquistadors arrived; there were groups of people who had cultural centers like the Maya and Aztec people who had centers in Mexico City and farther south.  The peoples to the north were more nomadic people who were more aggressive and who had less culture.  They were fighters and hunters who did not meld into the Spanish conquistador way of life.  These nomadic people were disseminated so that there are less rich food traditions north of Mexico City.
